This recipe utilizes the unique lipid profile of grass-fed beef to unlock plant antioxidants, while using precise applications of citrus and organosulfurs to maximize mineral absorption.
Nutritional Synergies at Play
- Organosulfur + Minerals: The heavy base of red onions and garlic chelates the zinc and heme iron in the grass-fed beef, guaranteeing maximum absorption. The red onions also provide a bonus dose of anthocyanins.
- Carotenoids + Lipids: The tomatoes (lycopene) and bell peppers (beta-carotene) are cooked directly in the beef fat. These dietary lipids solubilize the carotenoids, allowing them to pass through the intestinal wall.
- Vitamin C + Iron / Vitamin E: A heavy squeeze of fresh lime juice added off the heat provides ascorbic acid, which reduces iron for absorption and continuously regenerates the Vitamin E found in the grass-fed fats.
- Resistant Starch & Grain Bio-Hacking: The accompanying rice is cooked in bone broth with an allium base (to unlock the grain’s minerals) and a lipid (coconut oil). By chilling the rice for 12 hours before eating, the starches convert into gut-healing, low-glycemic resistant starch.
Ingredients
The Picadillo: * 1 lb Grass-Fed Ground Beef * 1 large Red Onion (diced) * 4 cloves Garlic (minced) * 1 large Red Bell Pepper (diced) * 1 can (14.5 oz) Diced Tomatoes (or 3 fresh Roma tomatoes, diced) * 1/4 cup Green Olives (pitted and roughly chopped) * 1 tsp Cumin * 1 tsp Smoked Paprika * 1 whole Lime (for fresh juice) * Garnish: Fresh Cilantro
The Bio-Hacked Rice Base: * 1 cup White or Brown Rice * 2 cups Bone Broth (beef or vegetable) * 1 tsp Coconut Oil or Olive Oil * 1 Tbsp Minced Onion or Garlic
Instructions
Part 1: The Bio-Hacked Rice (Start 12-24 hours ahead for best results)
- The Mineral Unlock: In a small pot, sauté the minced onion/garlic (1 Tbsp) in the coconut oil (1 tsp) for 1 minute. Add the dry rice (1 cup) and toast for 60 seconds.
- The Broth Cook: Pour in the bone broth (2 cups), bring to a boil, reduce to a simmer, and cover until the liquid is absorbed.
- The Resistant Starch Hack: Once cooked, transfer the rice to a container and refrigerate for at least 12 hours. (You will reheat it when serving the picadillo. This transforms the carbs into prebiotic resistant starch).
Part 2: The Picadillo
- The Organosulfur Base: Heat a large skillet over medium-high heat. Add the ground beef (1 lb) and the diced red onion (1 large). Cook until the beef is browned and the onions are soft. (The onions are cooking in the beef fat, beginning the chelation process).
- Aromatics & Carotenoids: Stir in the minced garlic (4 cloves), cumin (1 tsp), and smoked paprika (1 tsp). Cook for 1 minute until fragrant.
- The Stew: Add the diced red bell pepper (1 large), tomatoes (1 can, 14.5 oz, or 3 fresh Roma tomatoes; with their juices), and green olives (1/4 cup). Reduce the heat to medium-low and let it simmer for 10-15 minutes until the liquid reduces and the peppers are tender. (The lycopene in the tomatoes is becoming bioavailable thanks to the heat and beef fat).
- The Ascorbic Acid Finish (CRITICAL): Remove the skillet entirely from the heat. Squeeze the juice of the entire lime over the picadillo and stir well. (No heat ensures the Vitamin C remains intact to unlock the iron and regenerate antioxidants).
- Serve: Reheat your bio-hacked rice. Ladle the hot picadillo heavily over the rice and garnish with fresh cilantro.
