This dish is a targeted delivery system for Sulforaphane—one of the most potent cellular protectors in the plant kingdom—using a raw enzymatic unlock.
Nutritional Synergies at Play
- Glucoraphanin + Myrosinase: Roasting the broccoli provides delicious glucoraphanin but destroys the enzyme needed to use it. By dipping the hot broccoli and meatballs into a raw mustard sauce, we reintroduce the enzyme (myrosinase), instantly unlocking massive amounts of sulforaphane.
- Vitamin C + Vitamin E: The olive oil in the sauce provides Vitamin E, while the fresh lemon juice provides Vitamin C, creating a continuous antioxidant regeneration loop.
Ingredients
The Bowl: * 1 package Chicken Meatballs (fully cooked or raw, prepared according to package) * 2 large heads Broccoli (cut into florets) or 1 lb Brussels Sprouts (halved) * 1-2 Tbsp Olive Oil (for roasting) * Salt and pepper
The “Myrosinase Unlock” Sauce: * 1 Tbsp Raw Yellow Mustard Powder (e.g., Colman’s) - Must be raw/powder, do not heat! * 1 whole Lemon (juiced) * 2 Tbsp Extra Virgin Olive Oil * 1 clove Garlic (minced or grated) * 1 tsp Honey or Maple Syrup (optional, to balance the bite) * Pinch of salt
Instructions
- Roast the Crucifers: Preheat the oven to 425°F (220°C). Toss the broccoli florets (2 large heads, or 1 lb Brussels sprouts) in a little olive oil (1-2 Tbsp), salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until the edges are charred and crispy.
- Heat the Meatballs: Cook or warm your chicken meatballs (1 package) according to the package instructions. You can throw them on the same sheet pan as the broccoli for the last 10 minutes if they are pre-cooked!
- Build the Unlock Sauce: In a small bowl, whisk together the raw mustard powder (1 Tbsp), lemon juice (1 whole lemon), extra virgin olive oil (2 Tbsp), grated garlic (1 clove), honey (1 tsp), and salt (a pinch). Whisk until emulsified. (This sauce contains the live myrosinase enzyme).
- The Execution: Serve the hot chicken meatballs over a bed of the roasted broccoli.
- The Catalyst: Drizzle the raw mustard sauce heavily over the hot bowl right before eating, or serve it on the side as a dipping sauce. As you chew the broccoli and the raw mustard together, the sulforaphane unlock occurs instantly.
