Part V · Sweet
Prep time: 10 mins Freeze time: 3-4 hours
A visually stunning, refreshing snack that perfectly pairs the tang of Greek yogurt with the chew of dried fruit and the crunch of banana chips.
Nutritional Synergies at Play
- Carotenoids + Lipids: The dried tropical fruits (apricots, papaya) contain potent carotenoids. To absorb them, you need dietary lipids. If using non-fat yogurt, the fats from the sunflower kernels and coconut oil will successfully trigger the absorption.
- Vitamin E + Vitamin C (Regeneration): Sunflower kernels provide a massive dose of lipid-soluble Vitamin E. If you add a tiny splash of citrus to the yogurt base before freezing, the Vitamin C will continuously regenerate the Vitamin E in your system.
Ingredients
- Vanilla Greek Yogurt (If using non-fat, you must add the sunflower kernels or coconut oil)
- 1 tsp Coconut Oil, melted (optional, for texture and lipids)
- Mixed dried fruit (e.g., Turkish apricots, raisins, cranberries, papaya, pineapple), roughly chopped
- Banana chips (optional, but excellent for crunch)
- Sunflower Kernels (Essential for Vitamin E)
- (Optional toppings) Flaky sea salt, a squeeze of fresh lemon juice into the yogurt base
Instructions
- Prep the Base: Line a baking sheet with parchment paper. If using lemon, stir a squeeze of fresh lemon juice into the yogurt first. Pour the vanilla Greek yogurt into the center and use a spatula to spread it into an even layer, about 1/4 to 1/2 inch thick.
- Decorate: Scatter your chopped dried fruits, sunflower kernels, and banana chips evenly over the yogurt. Press them down slightly. If using coconut oil, drizzle the melted oil (1 tsp) over the top right before freezing for an extra layer of crunch and healthy fats. If using flaky sea salt, sprinkle a pinch over the top last.
- Freeze: Place the tray flat in the freezer for 3 to 4 hours, or until completely solid.
- The Crack: Remove the tray, peel the yogurt off the parchment, and use your hands or a knife to break it into jagged shards.
Storage: Keep the pieces in a sealed ziploc bag or container in the freezer. Grab a shard whenever you want a cool, chewy, and crunchy treat!
