Part IV · Broths and Small Plates

Yield: ~750ml clarified consommé (Serves 4) Prep time: 90 mins active (Simmering) Filtration time: 12 - 24 hours (Freezing + Thawing)

This recipe utilizes the physical properties of a powdered beef gelatin hydrocolloid to perform a perfect molecular clarification. Unlike a traditional egg-white raft, which relies on protein coagulation and heat, this protocol uses the “gelatin-ice filter” technique.

The Architectural Physics

Gelatin is a triple-helix collagen derivative. When hydrated and gelled, it forms a cross-linked network of fibrils with pore spaces large enough to pass flavor molecules (amino acids, sugars, volatile aromatics) but small enough to trap suspended particulates (cell wall fragments, fat micelles, coagulated proteins). By freezing this gel and allowing it to thaw slowly over a filter, the gel acts as a slow gravity filter. The pure, clear liquid drips out, while the impurities remain trapped in the collapsing, fibrous gelatin matrix. The signature structural ingredient is entirely absent from the final dish.

Ingredients

The Base Extract:

  • 500g Mixed Mushrooms (Cremini for body, dried shiitake for umami depth, fresh chanterelles or maitake if available), roughly chopped
  • 2 large Yellow Onions, halved
  • 1 Leek, white and light green parts, chopped
  • 2 cloves Garlic, smashed
  • 1 sprig Fresh Thyme
  • 1 Bay Leaf
  • 1 Tablespoon Soy Sauce or Tamari (for glutamate depth)
  • 1.5 liters Water (or light vegetable stock)
  • Salt to taste

The Structural Matrix:

  • 15g Powdered Unflavored Beef Gelatin (approx. 1.5–2% of final strained stock volume)
  • 75ml Cold Water (for blooming)

The Garnish:

  • A few paper-thin raw mushroom slices
  • 1 microgreen or chive tip per bowl
  • A few drops high-quality toasted sesame oil or olive oil

Method

1. The Extraction (Deep Maillard Searing)

  1. Heat a dry, heavy-bottomed pan. Place the halved onions (2 large) cut-side-down and deeply char them until near-black. (This introduces Maillard melanoidin compounds that give the clear broth a deep amber color).
  2. Combine the charred onions, mushrooms (500g), leek (1), garlic (2 cloves), thyme (1 sprig), and bay leaf (1) in a large pot with the 1.5 liters of water (or light vegetable stock).
  3. Simmer gently for 90 minutes. Never allow a hard boil, as aggressive agitation emulsifies fats and permanently clouds the stock.
  4. Strain through a fine sieve, pressing gently to extract liquid.
  5. Season with soy sauce (1 Tablespoon) and salt (to taste). The stock must be aggressively flavorful here, as the cold filtration will naturally soften the intensity slightly.

2. The Hydrocolloid Bloom

  1. Sprinkle the 15g of gelatin evenly over the 75ml of cold water. Let it bloom for 5–10 minutes until spongy. (This pre-hydration prevents the granules from clumping).
  2. Add the bloomed gelatin to the hot (not boiling) strained stock. Stir until the triple-helix collagen bonds are completely dissolved into the liquid.

3. The Freeze (Matrix Lock)

  1. Pour the gelatin-enriched stock into a container and refrigerate until fully set into a firm gel.
  2. Transfer to the freezer and freeze completely solid (ideally overnight).

4. The Cold Filtration (Pore-Size Exclusion)

  1. Line a fine chinois or colander with several layers of dampened cheesecloth or a coffee filter. Set it over a clean collection vessel.
  2. Remove the frozen block of gelatin stock from its container and place it directly into the filter.
  3. Place the entire setup in the refrigerator and let it thaw slowly. (A room-temperature thaw will collapse the gel too fast, releasing cloudy impurities).
  4. Do not press, squeeze, or disturb the gel. Gravity will pull the pure, crystal-clear, amber-gold consommé through the matrix over 8 to 12 hours.

5. Final Assembly

  1. Gently rewarm the clarified consommé on the stove. Do not boil, as you want to preserve the volatile aromatics.
  2. Serve in a shallow bowl.
  3. Garnish minimally: a few paper-thin raw mushroom slices, a single (1) microgreen or chive tip, and a few drops of high-quality toasted sesame oil or olive oil to bead on the clear surface.
