Part III · Mains

Prep time: 15 mins Cook time: 30 mins Yield: 6 big bowls

The comfort soup that goes around social media (smoked sausage, cheese tortellini, cream and Parmesan), rebuilt so a bowl fits a cholesterol-and-blood-pressure plan. It keeps the smoky sausage coins, the cheese-stuffed pasta and the creamy orange broth. The saturated fat drops from about 20 g a bowl to about 6, and the sodium is cut by more than half.

Written October 2026, from a photo of the original that looked too good to give up.

Why It Works

  1. Chicken sausage instead of smoked beef sausage: Lean chicken sausage (about 3 g saturated fat a link at Aldi) gives the same browned, smoky coins for a fraction of the saturated fat.
  2. Beans make it creamy: Half a can of cannellini beans blended with broth thickens the soup the way cream does. It adds fibre and protein instead of saturated fat.
  3. Evaporated fat-free milk instead of cream: It is cooked down already, so it tastes rich and won’t split in a hot, acidic soup. It has almost no fat.
  4. Half the tortellini: You still get cheese-stuffed pasta in every spoonful; the beans and kale fill the rest of the bowl.
  5. Parmesan on top, not stirred in: A spoonful on the surface is the first thing you taste, so a little does the work of a lot.

Ingredients

The Base:

  • Olive Oil: 1 Tbsp
  • Chicken Sausage: 4 links (about 12 oz), sliced into coins
  • Onion: 1 small, diced
  • Garlic: 3 cloves, crushed and rested 10 minutes

The Broth:

  • Crushed Tomatoes: 1 can (28 oz), no salt added. A jar of marinara works but adds a lot of sodium.
  • Chicken Broth: 4 cups, low-sodium
  • Italian Seasoning: 1½ tsp
  • Crushed Red Pepper: ¼–½ tsp, to taste

The Cream:

  • Cannellini Beans: 1 can (15 oz), drained and rinsed
  • Evaporated Fat-Free Milk: 1 can (12 oz)

The Finish:

  • Cheese Tortellini: one 9–10 oz package (refrigerated)
  • Kale: 4–5 cups, stems removed, chopped. Kale rather than spinach: spinach is very high in oxalate.
  • Parmesan: 1–2 Tbsp per bowl, grated

Execution Protocol

Phase 1: The Brown

  1. Heat the olive oil (1 Tbsp) in a large pot over medium-high heat.
  2. Add the sausage coins (4 links, about 12 oz) and brown them on both sides, about 5 minutes. Set them aside on a plate.
  3. Lower the heat to medium. Add the onion (1 small) and cook until soft, about 4 minutes. Add the rested garlic (3 cloves) for the last minute.

Phase 2: The Broth

  1. Add the crushed tomatoes (1 can, 28 oz), 3 cups of the broth, the Italian seasoning (1½ tsp) and the red pepper (¼–½ tsp, to taste).
  2. Bring it to a simmer.

Phase 3: The Cream

  1. Blend half the beans (½ of the 15 oz can) with the last 1 cup of broth until smooth (a blender, or a stick blender in a jar).
  2. Stir the bean cream, the whole beans (the other ½ can) and the evaporated milk (1 can, 12 oz) into the pot.
  3. Keep it at a gentle simmer from here on. Don’t boil it hard.

Phase 4: The Finish

  1. Add the tortellini (one 9–10 oz package) and the browned sausage. Simmer until the tortellini are tender, about 5–7 minutes (check the package).
  2. Stir in the kale (4–5 cups) and cook 2–3 minutes, until it wilts.
  3. Ladle into bowls and top each one with Parmesan (1–2 Tbsp per bowl).

Notes

  • Leftovers: the tortellini keep soaking up broth overnight. Add a splash of broth or water when you reheat.
  • Sodium: most of what is left comes from the sausage and the tortellini. Rinsing the beans and using no-salt-added tomatoes keep it from climbing.
  • Not for dogs: onion and garlic are toxic to dogs, and the sausage is seasoned.
