Part II · Mornings
Prep time: 15 mins
A chef’s technique for elevating dried fruit and yogurt. By gently rehydrating the dried fruit first, you transform tough, chewy pieces into luxurious, jammy bites that contrast perfectly with the thick yogurt and crunchy banana chips.
Nutritional Synergies at Play
- Carotenoids + Lipids: Apricots, papaya, and pineapple are packed with carotenoids. To absorb them, you need dietary lipids. If using non-fat yogurt, the fats from the sunflower kernels and a drizzle of coconut oil will successfully trigger the absorption.
- Ascorbic Acid + Non-Heme Iron: Raisins and apricots contain non-heme iron. The lemon juice used in the plumping liquid reduces this iron into a highly absorbable state.
- Vitamin E + Vitamin C (Regeneration): By adding sunflower kernels, you introduce a massive dose of Vitamin E. The Vitamin C from the lemon juice continuously regenerates these antioxidants, amplifying cellular protection.
Ingredients
- Vanilla Greek Yogurt (If using non-fat, you must add the sunflower kernels or coconut oil)
- Handful of Sunflower Kernels (for Vitamin E and lipids)
- 1 tsp Coconut Oil (optional; melted at serving, for texture and lipids)
- Dried tropical fruits (Turkish apricots, papaya, pineapple), chopped
- Dried tart/sweet fruits (Thompson raisins, cranberries)
- Banana chips (kept separate!)
- The Plumping Liquid: 1 Tbsp warm water mixed with 3-4 drops of concentrated lemon juice (or 1 Tbsp fresh citrus juice)
Instructions
- Sort and Chop: Pick the banana chips out of the mix and set them aside to protect their crunch. Roughly chop the larger fruits (apricots, papaya, pineapple) so they are roughly the size of the raisins.
- The Quick Citrus Plump: Place all the chopped fruit (except the banana chips) into a small bowl.
- Hydrate: Pour the Plumping Liquid (1 Tbsp warm water + 3-4 drops of lemon concentrate, or 1 Tbsp fresh citrus juice) over the fruit. Toss to coat and let sit for 10 minutes. The warm water softens the dense fruit, while the diluted lemon concentrate provides a bright, zesty acidity without being overly sour.
- The Build: Scoop a generous amount of vanilla Greek yogurt into a bowl. Spoon the rehydrated, juicy fruit mixture over the top.
- The Finish: Take the reserved banana chips and the handful of sunflower kernels, crush them slightly in your hand, and scatter them over the very top. If you are using coconut oil (1 tsp), melt it slightly and drizzle it over the cold yogurt right before eating—it will instantly harden into a crunchy “magic shell.”
Enjoy the contrast of the cool yogurt, jammy fruit, and loud crunch!
